Poached Eggs with Ham, Cherry Tomatoes, Goat Cheese, Bread, Parsley, and Greens



This recipe is my attempt to recreate the "eggs eleganza" dish served at the Gold Street Cafe.

Ingredients
3 poached eggs
3 slices of bread (toasted or untoasted)
a few slices of ham or prosciutto (optional)
a handful of cherry tomatoes (halved)
goat cheese
a handful of salad greens
balsamic vinaigrette
minced parsley

Assemble as shown.

Ok.. this is my kind of meal! I love eggs and simple recipes.

I ate all of it! I loved this dish too--it was perfect for a Sunday morning.

However Max also got his own plate.
