Homemade Black Sesame & Blue Corn Crackers and Hummus Drizzled with Olive Oil

Friday, March 17, 2006

Black and Blue Crackers

1/2 cup buttermilk
3 Tbsp olive oil
1 cup blue corn meal
1/2 cup pastry flour
3/4 tsp salt (preferably sea salt)
1/4 tsp baking soda
1/8 tsp cayenne or cumin
1/2 tsp chili powder or paprika
1 clove minced garlic
1 Tbsp raw black sesame seeds

Preheat oven to 350 degree F. Combine buttermilk and oil. Mix the rest of the ingredients in a separate bowl. Add the liquid to the dry ingredients and mix with a fork. Knead for about 5 minutes--add more flour if necessary. Roll out the dough until it is very thin. Cut into 2 inch squares or other shapes. Lightly oil a baking sheet. Transfer the crackers to the backing sheet. Sprinkle the crackers with additional salt. Bake for 15 minutes or until slightly brown around the edges. Cool slightly before removing from the baking sheet, and then transfer to a wire rack. Store in loosely covered container.

Serve with salsa or hummus.

Based on the recipe given on the Arrowhead Mills blue corn meal package, but the black sesame seeds are my own idea.

I hate cumin. This is one spice that I really don't like...
