Inari



Inari are a type of sushi made from fried tofu pockets filled with rice.

Pour boiling water over fried tofu to remove oiliness. Pat dry, and cut in half. Fill with sushi rice.

Rice Ball



Cook a mixture of rice (forbidden rice, white rice, polished brown rice which cooks in the same time as white rice, and sticky rice shown here) in rice cooker. When its done. Fluff rice, and add a tsp of mirin & vinegar and a pinch of rice as if you were making sushi rice. Toss rice with paddle until it cools off.

Place a piece of seaweed on workspace. Dip fingers in a small cup of water; shake off excess water. Place a few spoonfuls of rice on the bottom of the seaweed, and gently mold into a triangle. Put some Japanese pickles in the middle of the rice (daikon and Japanese plum shown here). Sprinkle some Japanese red pepper over pickles. Wet fingers. Cover with another layer of rice and mold into triangle. Fold seaweed around rice.
