Nice spread, but what is that between the asparagus and the green beans?

Cranberries! Cranberries are the red stuff in the center of the asparagus, mushrooms, green beans, carrots, and squash.

Not the cranberries. It was the mushrooms I didn't recognize. I thought it might be a Tofurkey Roast.

What kind of mushrooms are they? They look enormous.

They are called eringi in Japanese, and king oyster mushroom in English.
