For 2 servings: Make 4 hard boiled eggs. Refrigerate until cold. Peel eggs, and chop. Mix with salt, pepper, mayonnaise, mustard, and your choice of spices and flavorings (e.g. curry, paprika, minced raw onion, minced celery). Serve in a sandwich with lettuce (tomato too if you like).
I went a bit wild on the spices in this one. I saw some horseradish roots at the grocery store yesterday and couldn't resists buying one, so I added fresh grated horseradish into this. I also added Dijon mustard, curry powder, and smoked Spanish paprika, mayonnaise, salt, and pepper... Oh! and finely minced cutting celery (a leaf herb, similar to parsley, except it tastes like celery).
Indian Sambar Soup and Lentil Tortillas

The Sambar has 4 roma tomatoes, okra, and 1 large potato and I added a bit of tamarind extract at towards the end of cooking; I made this from a Sambar spice mix. I bought the lentil Tortillas premade at an Indian grocery--they are very easy to make, just heat in an oven for a few minutes until crispy but not too browned (e.g. 350 degrees, 3 to 4 minutes).
