Fried Rice

Rice made using "sushi" setting on rice machine. The fried rice has 1 red chili cut into small flakes, a few slices of a fresh green chili, sea salt, white pepper, frozen peas, scrambled eggs, and sesame seeds.

Hummus Whole Wheat Pita with Heirloom Tomato & Sprouts

If desired, sprinkle a bit of spanish paprika over the tops of the pita sandwiches.

Baby Roasted Eggplant

Preheat oven to 350 degrees. Wash and cut baby eggplant in half. If you have really fresh eggplant from the farmer's, then there is no need to salt and press the excess liquid out of it. Arrange the eggplant on a baking sheet, cut side up. Drizzle with olive oil and sea salt. Roast until the insides of the eggplant are soft and can be pierced easily with a fork. (It took around 20 minutes for mine, but really large eggplants can take up to an hour).

Roast Chicken Tip

After you rinse a chicken that will be roasted, make sure to thoroughly dry its skin with paper towels. Otherwise, if the skin is still wet when it goes into the oven, the skin will be steamed, and won't turn out crispy.

Also, you could try out spreading mustard on the skin, or sprinkling herbs in addition to salt and pepper on the skin.
